Would that text-only/SEO-friendly version of the page EVER be able to be hosted on my own server? I suppose the rationale of expecting searchers to click onto my site is not bad. Can the moot embeds on my site not be crawled by Google?

You absolutely can serve the content from your page. You can simply proxy the content if you have access to your apache or nginx config. We'll post some examples shortly walking you through how to do this.
