I have a strong allergy reaction (A migraine) after ingesting food containing MSG. While travelling in Thailand (twice) and eating only Thai food, I did not have any problems. Here in Canada and also other countries, I have to read labels on sauces very carefully as they don't always list MSG as ingredients, but use words as "flavouring" and similar. If the sauces you are using are available in Canada, can you check if they do contain MSG or any forms of it? Thank you.
So sorry for this delayed reply. Fist, let me say thanks for asking a great question and for sharing your travel and allergy stories. They do like to use MGS in most Asian countries, even Thailand. But luckily, it is becoming less and less and people start to understand the dangers. I never use MSG in my cooking, and never use ingredients that contain MSG. That said, I am not professionally trained in food nutrition, and so there might occasionally be something that slips through the cracks. But I never ever knowingly use MSG.
